Cut the cauliflower into small florets. Bring a large pot of water to a boil and add the cauliflower. Cook until completely tender.

Remove the cauliflower from the heat and drain. Melt the butter in a microwave. Add the cauliflower and butter to a food processor.

Season with some salt and pepper to taste. Process until completely smooth. Remove the cauliflower from the food processor and set it aside.

Peel the garlic clove. Add the creme fraiche and garlic to a small saucepan and bring to just steaming. Make sure not to boil the creme fraiche. Stir constantly.

Remove and discard the garlic. Pour the hot creme fraiche into the mashed cauliflower. Mix well.
Step 6
Transfer the cauliflower mixture to a large pan and place on the stovetop over low heat. Using a spatula or a wooden spoon, beat the mixture until it turns glossy. This will take about 2 minutes.
Step 7
Shred the cheddar cheese. Raise the heat to medium and mix in the shredded cheddar, ½ cup at a time. Continue to mix until the cheese has completely melted and the aligot is entirely smooth.
Step 8
Taste and add more salt or pepper if necessary. Optionally, garnish with some freshly chopped parsley before serving.
