This Creamy Broccoli Salad is an excellent recipe to add to your easy Keto dinners collection. It's a wonderful combination of tender broccoli, crispy bacon, and a creamy dressing you will love. This recipe is also a perfect option to prepare in advance and store in the fridge until ready to eat. We added some diced jalapenos to the salad, but you can swap it for some diced chilies or bell peppers. Heat a large pan over medium heat. Add the bacon and cook until the desired crispiness. Remove from the heat, transfer to a large plate lined with paper towels, and set it aside.
Cut the broccoli into smaller florets. Discard some of the bacon fat from the pan, leaving some for the broccoli. Add the broccoli florets and cook for 10-12 minutes or until tender. Remove from the heat and cool for a while.
Meanwhile, prepare the dressing. Add the mayonnaise, Greek yogurt, lemon juice, dried thyme, salt, and black pepper to a small bowl. Mix to combine. Set it aside.
Peel and finely chop the onion. Dice the jalapeno peppers. Shred the cheddar cheese. Add the broccoli, peppers, onions, and shredded cheddar to a bowl.
Crumble the bacon. Add to the bowl with the remaining ingredients. Pour in the dressing and toss to combine. Taste and optionally add more salt or black pepper.
