Remove the steaks from the fridge 30 minutes before cooking. Let sit at room temperature until ready to cook. Generously season both sides with salt and pepper.
Step 2
Place a piece of coal onto an open fire. Heat a grill pan over medium-high heat until scorching hot. Add the ghee and brush to distribute. Add the steaks and cook for 2 minutes without moving them.
Step 3
Flip and cook for 2 more minutes. Flip again and let the previous grill marks be perpendicular to the new. Cook for a final 3 minutes.
Step 4
At this point, pick up the steak using tongs and insert a food thermometer through one side. It should read 130-135 F for medium-rare or 135-145 for medium. Cook for longer if needed until the steak reaches your desired doneness.
Step 5
Take the steaks off the pan and place them in a cold pan. Transfer the well-lit coal to a piece of aluminum foil and transfer it to the pan with the steaks. Add 1 tsp of butter over the coal and immediately place a lid or plate over the pan.
Step 6
Let the steaks rest and infuse for 10 minutes. Transfer each steak to a plate and top with a tsp of butter. Serve immediately.
