Add ½ tbsp of butter to a nonstick pan and place it over medium-high heat. Once melted, add the beef and season with ¼ tsp salt and ¼ tsp black pepper. Cook until browned, then transfer to a plate.

Add the eggs to a bowl and season with the remaining salt and pepper. Whisk until no egg white threads remain. Add the remaining butter to the pan and place over medium heat.

Once the butter melts, pour the eggs into the pan. Drop the heat to low and cover the pan with a lid. Cook for 2-3 minutes or until fully cooked.
Step 4
Transfer the omelet to a plate and add the cooked beef to the center. Top with parmesan cheese and fold both sides to the center. Garnish with chopped parsley and serve.
