Place the cranberries in a small pan set over medium-low heat. Add the 3 tablespoons of orange juice, sweetener, and 2 sprigs of fresh thyme. Simmer gently for 5 minutes or until the cranberries have plumped and just starting to break down. Remove from heat and set aside to cool.
Step 2
Crumble the feta into a food processor or blender. Pulse a couple of times to break up any large chunks. Add the minced garlic, cream cheese, 2 tablespoons olive oil, and leaves from 2 thyme sprigs. Pulse until smooth and combined.
Step 3
Transfer the whipped feta to a serving dish. Spoon the cranberries and their juices over the feta dip. Drizzle with the remaining 1 tablespoon of olive oil. Garnish with extra thyme sprigs for presentation (optional).
