Our Keto turkey burgers are high in protein and perfectly Low Carb too. Tender ground turkey is mixed with garlic, salt, and chopped parsley for a fresh flavor that shines through. Each patty is smashed and cooked in a cast-iron skillet. This method results in patties cooked to perfection with both browned and crisp edges. The cooked patties are topped with American cheese that melts wonderfully over the patties. Then each patty is placed into Keto-friendly hamburger buns, which are layered with sliced tomatoes, red onion, and crispy cold lettuce on the inside. The buns are smothered with avocado oil mayo and sugar-free ketchup.
Prepare the tomato by slicing off the top and slicing the tomato into four equal portions. Wash the lettuce leaves and spin them dry. Set these both aside.
Add the ground turkey meat to the bowl of a stand mixer fitted with a paddle attachment. Add the chopped parsley, 1 tsp kosher, and granulated garlic. Mix well until combined, about 1 minute. The mixture will look pretty loose; this is normal for ground turkey.
Preheat a large seasoned cast iron or blue steel skillet over medium-high heat until hot. Add in ½ tsp of lard and swirl the pan to coat it. Use a 3 oz cookie scoop to portion the ground turkey into patties. Place three scoops into the heated pan evenly spaced.
Allow the patties to cook on the first side until golden brown, about 2 minutes. Leave them in a mounded shape, making it easier to flip them. Flip the patties and smash each of the patties hard into the skillet.
Repeat on the other side until browned. Flip the burger patties once more to finish browning the first side. Top each with a slice of American cheese. Cook on low heat until the cheese is melted. Remove the burgers from the heat. Place them into a warmed oven and repeat the process for the remaining patties.
If using a Keto hamburger bun, slice the buns in half. Preheat a large nonstick skillet over medium heat until hot. Add one tablespoon of butter for each batch of buns. A large skillet should fit two buns sliced in half. Cook over low heat until the bottom of the buns are nicely browned.
Add ½ tablespoon of mayo to one-half of the sliced buns and ½ tablespoon of ketchup. Top each bun with a burger patty with melted cheese. Then top the patty with one slice of tomato, one lettuce leaf, some sliced red onion, and pickles. Serve immediately.
