If you’re looking for a date night dinner recipe that is easy to prepare and absolutely delicious, try this fantastic chicken stuffed with spinach, sun-dried tomatoes, and cheese. This lovely dish is wonderfully creamy and bursting with flavors – a perfectly healthy dinner for 2. We prepared this beautiful meal in the oven for a healthier version, but you can also fry it in some butter (it tastes fantastic). Serve the prepared chicken with your favorite fresh vegetable salad, low-carb veggies of choice, mashed cauliflower, or cauliflower rice. Optionally, sprinkle with some more crumbled feta on top and enjoy!

How to Make It

Step 1

Wash and pat dry the chicken breasts. Place them on a cutting board. Using a sharp knife, create a pocket for the stuffing. Be careful not to cut all the way through the other side. Season the chicken breast with salt and set them aside.

Step 2

Shred the cheddar cheese. Crumble the feta cheese. Finely chop the tomatoes. Roughly chop the spinach. Add the feta, cream cheese, ¼ cup of cheddar, tomatoes, spinach, smoked paprika, and black pepper to a bowl. Mix to combine.

Step 3

Preheat the oven to 180°C (350°F): Grease the bottom of a small baking dish with butter. Stuff the prepared chicken breasts with the spinach mixture and place them in the baking dish. Sprinkle with the remaining two tablespoons of shredded cheddar and bake for 30-35 minutes or until cooked through.

Step 4

When done, transfer to serving plates. Optionally, serve with some fresh veggies or crumbled feta. Enjoy!
