How to Make It
Step 1
Preheat your oven to 350 F (180 C). Line an oven-safe baking dish with parchment paper and set that aside. Melt the butter in a large microwave-safe bowl.
Step 2
Add the almond flour, flaxseed meal, baking soda, baking powder, salt, thyme, and garlic powder together in a separate bowl. You can also sift the ingredients together. Then, mix the dry ingredients into the melted butter.
Step 3
Finally, whisk the eggs together in a clean bowl. Then, add them to the batter. Once well mixed, fold the lemon juice into the batter.
Step 4
Divide the batter into how many servings you’re making. Use a spoon to scoop the batter into domes the size of an English muffin. Make sure to leave some space in between the domes.
Step 5
Bake the English muffins for about 20 minutes, or until the tops of the rolls begin to brown slightly. Allow them to cool for 5-10 minutes before slicing. Top with butter or use the English muffins as a sandwich roll/bun!
