How to Make It

Step 1

Grab slices of Keto bread and toast them just like you would a piece of toast at breakfast. Let the toasted Keto bread cool before you cut the crispy slices into small diced pieces. Make sure the bread cubes are really fine before you add them to a large mixing bowl along with the ground beef, salt, pepper, garlic powder, onion powder, parsley, allspice, red pepper flakes, paprika, and cardamom. Now, use your hands to mix everything together, making sure to massage the meat and bread cubes, until a soft and spongy kofta mixture comes together.

Step 2

Leave the bowl of kofta mixture aside to give the bread time to absorb some moisture and for the meat to rest – at least 10 minutes. While that’s set aside, you can make the tzatziki sauce. Stir greek yogurt, tahini, lemon juice, salt, and garlic powder together in a bowl until a smooth, off-white sauce comes together. Next, use a cheese grater to grate whole seedless cucumber into fine shreds until you reach the weight listed in the ingredients. Stir the cucumber into the sauce.

Step 3

To make the beef kofta, start heating a large skillet or grilling pan over high heat on your stove. Here, a cast-iron griddle was used to grill the koftas. Divide the meat mixture into your servings before rolling each portion into a ball. Then, push a skewer into a “meatball” as you press the meat into an oblong and flattened kofta. Repeat the process until all the koftas are formed on skewers.

Step 4

Lay each kofta down in the hot skillet, and cook them on one side for approximately 4-5 minutes before flipping them over with a pair of tongs. Cook the koftas for an additional 3-5 minutes, adjusting the heat to a lower setting to avoid burning. Let all cooked koftas rest a few minutes before serving with the cool tzatziki sauce. You can eat the koftas with lettuce wraps or another favorite Carb Manager Keto wrap, pita, or tortilla.
