Slice the chicken into thin strips and set aside. To a large bowl, add 3 minced garlic cloves, tomato paste, ¼ cup yogurt, orange zest, lemon zest, lemon juice, white vinegar, olive oil, spices, 1 tsp salt, and ½ tsp black pepper. Whisk well.
Add the chicken to the bowl and toss to coat well. Cover and refrigerate for 8-12 hours.
Preheat your oven to 275C/450F. Add the chicken to a sheet pan and spread into a single layer. Slice the onion and pepper and add them to the pan.
Bake for 30 minutes until slightly charred. Meanwhile, make the garlic sauce. In a small bowl, mix 3 tbsp of mayonnaise, 3 tbsp Greek yogurt, and 1 minced garlic clove. Season with salt and pepper to taste and set aside.
