How to Make It

Step 1

Begin by making the Keto condensed milk. To a saucepan over medium heat, whisk 1 cup of heavy cream and the powdered sweetener until combined. Bring to a simmer, then drop the heat to low. Let the mixture simmer for 20 -25 until reduced by half, and set aside to cool.

Step 2

To a bowl, add 1 cup of heavy cream. Beat using a hand mixer until the mixture reaches stiff peaks. Add the cocoa powder and beat until combined, then set the bowl aside.

Step 3

Pour the Keto condensed milk into the bowl with the chocolate whipped cream. Gently fold until incorporated and no lumps remain. Don’t whisk or mix vigorously to retain the air in the whipped cream.

Step 4

Roughly chop the dark chocolate. Pour the ice cream mixture into a freezer-safe container and add the chocolate chunks on top. Secure with a lid and place in the freezer. For the first 2 hours, take the ice cream out of the freezer every 20-30 minutes, and whisk.

Step 5

The ice cream will take around 4 hours in total to set. Take it out of the freezer, scoop it, and serve immediately. If it is too hard, let it thaw on the counter for 10 minutes before serving.
