Delicious feta cheese is marinated in extra virgin olive oil with some orange zest, fresh mint, peppercorn, and red pepper flakes. With its wonderful minty aroma, the dish can be served alone or combined with some low-carb vegetables to make a heartier dish. Please note that the total preparation time includes the time necessary to marinate the cheese. You can also prepare the cheese in advance and keep it in the refrigerator until ready to serve.

How to Make It

Step 1

Cut the feta into chunks. Add the cheese to a bowl. Pour in the olive oil and add the orange zest, fresh mint, peppercorn, and red pepper flakes. Toss to combine and refrigerate for at least 30 minutes.

Step 2

Using a sharp knife, cut the zucchini in half lengthwise. Cut each piece into bite-sized pieces. Set it aside.

Step 3

Roughly chop the arugula. Place on serving plates and add the spinach. Top with the chopped zucchini.

Step 4

Add the marinated feta cheese and optionally garnish with some more fresh mint. Season with some salt and pepper to taste, or add some more olive oil. Serve immediately.
