In need of the perfect multigrain loaf that is full of healthy fiber from chia seeds, flax seeds, almond flour and more? Look no further than this yeasted loaf! This loaf is the perfect slicing bread for avocado toast, toast with cream cheese or toast slathered with a thick layer of almond butter.
Preheat an oven to 350 F. Combine yeast, ¼ cup water and honey in a small bowl. Allow this to sit for 3-5 minutes until foamy.
Combine all dry ingredients together in the bowl (including chia and flax seeds) of a stand mixer using a paddle attachment.
Add vinegar and ½ cup boiling water. Then mix well in the stand mixer starting on low speed and then turning it to medium speed. Mix for 45 seconds to 1 minute.
Add the eggs and mix well for another 1-2 minutes.
Add the yeast mixture and mix well.
Spray a loaf pan with nonstick cooking spray. Place dough into a loaf pan and put a line down the center. If you mound the dough into a loaf shape, it will help the final outcome. Allow the loaf to rise in a warm place for 1 hour.
Bake in the oven for at least 60 minutes if not more (about 70 minutes). They tend to look baked on the outside, but are under on the inside and will collapse. Be sure to err on the side of caution and give them extra time if you are unsure, it shouldn’t harm it.
