Nothing seems more refreshing than the combination of cucumber and strawberries on a hot day. In this drink, fresh cucumber juice is infused with homemade strawberry syrup. Sparkling water is the last thing you need to make you say “ah.” You don’t have to save this recipe for hot weather either! This strawberry cucumber cooler is particularly hydrating and can be enjoyed often. Although the recipe here is a Keto non-alcoholic drink, you could add liquor, which has zero carbs. This drink would make a great cocktail if mixed with vodka, gin, or light rum.
Add frozen strawberries, water, lemon juice, and liquid stevia to a small pot. Cook the ingredients until they’re boiling. Boil the strawberries until they’re very soft and start to break down a little.
Take the pot of strawberries off the stove, and use an immersion blender to puree the strawberries and water. Pour the strawberry liquid through a strainer into a glass. Discard the pulp and seeds.
Pour the strained liquid back into the pot. Heat the liquid until it’s simmering, and simmer until it reduces by about half. You’ll need to leave the strawberry syrup aside to cool for at least 30 minutes.
If you own a juicer, you can simply juice the cucumber. Otherwise, grate the cucumbers entirely into a cheesecloth or unused floursack cloth. Squeeze the juice out into a bowl to get the cucumber juice and discard the pulp.
To make one drink, add a tablespoon of strawberry syrup to the bottom of a glass. Fill the glass with ice cubes or frozen strawberries (not included in the ingredients). Add the equivalent of half of a cucumber’s juice. Now, pour 4-6 fluid ounces of sparkling water into the glass to finish the drink.
