Whole cremini mushroom caps are not only the perfect size and shape but also the perfect flavor complement for these pizza-themed snack stack. By slicing the mushroom caps in half like a sandwich, you can fill the two halves with slices of cheese and pepperoni for a yummy finger-food snack.
Remove the stems from medium-sized mushrooms that are equal in size. Slice each mushroom cap in half like a sandwich. Toss the sliced mushroom caps in a bowl with the olive oil, vinegar, salt, pepper, garlic, red pepper, and basil. Wrap and set this bowl aside in your refrigerator to marinate at least 1 hour (but you may go longer for softer mushrooms).
When done marinating, slice the mozzarella cheese into quarters and arrange single slices of pepperoni.
Create the stacks by sandwiching a piece of cheese and pepperoni between 2 matching pieces of mushroom. Secure with a toothpick. For serving, make sure to drizzle any extra seasoned liquids from marinating over the stacks.
