You will love this delicious and easy way to enjoy BLTs Keto-style! This Keto for Beginners recipe is simple to put together. Hard-boiled eggs are sliced in half and stuffed with crispy bacon (cooked in the microwave!), lettuce, and creamy mayonnaise for extra fat. If possible, try to use mayonnaise made with fats like olive oil or avocado oil. These BLT eggs can be stored in the fridge for a couple of days, so you can prep several ahead of time for a quick snack or even a Keto breakfast.

How to Make It

Step 1

Bring a small pot of water to a boil. Gently lower the eggs into the boiling water using a slotted spoon. Allow the eggs to boil for 9 minutes. Once the time has passed, drain the water on the eggs and add cool water and plenty of ice to halt the cooking process. Shocking the eggs will help with the peeling process.

Step 2

While the eggs are cooking, place the bacon on a microwave-safe plate. Microwave the bacon for 1 minute. If it is not crispy, add another 30 seconds. Allow the bacon to cool. It will crisp more as it cools.

Step 3

Peel the eggs and give them a rinse to remove any shell remnants. Cut each egg in half. Top ½ of the cut eggs with ½ teaspoon of mayonnaise.

Step 4

Break the bacon pieces into thirds and top ½ of the cut eggs evenly with it. Top the bacon with the lettuce. Top the lettuce with the other half of the egg to create a sandwich.

Step 5

Stick a toothpick into each egg to hold it together. Serve immediately. You can also store the eggs in the refrigerator for a couple of days.
