Add the almond meal to a bowl along with the Parmesan, garlic powder, Italian seasoning, salt and pepper. Stir well to combine.

Slice the mozzarella into thick strips or wedges about 3/4 of an inch thick.

Beat the egg in a small bowl.

Coat each mozzarella strip in the beaten egg then roll in the seasoned almond meal, until well covered.

Once you have coated all the cheese in the breading, transfer to the freezer to set for a minimum of one hour.

Remove the frozen cheese from the freezer and heat a tablespoon of olive oil in a large frying pan.
Step 7
Add four of the breaded mozzarella sticks to the pan and fry for roughly 1 minute on each side, until golden brown and the cheese is hot through. Do not over cook or the cheese will melt!
Step 8
Repeat with the remaining oil and cheese and serve immediately.
