Moroccan Keto recipes can be fun and simple to prepare! This easy Keto Zaalouk is a spicy mixture of eggplants and tomatoes transformed into a beautiful salad for the entire family. It is a lovely side dish to your regular Keto meals, but it can also be served as a healthy and delicious dinner or even a Keto-friendly dip. It’s a gluten-free and vegetarian-friendly meal everybody can enjoy, whether Keto or not. This flavorsome dish can be prepared in advance and stored for a couple of days. Easy Keto zaalouk can be served warm or cold.
How to Make It
Step 1
Roughly chop the eggplant and tomatoes. Slice the garlic. Finely chop the parsley. Grease a large pan with olive oil and heat over medium heat. Add the eggplant, tomatoes, garlic, parsley, cilantro, smoked paprika, cayenne pepper, ground coriander, cumin, salt, lemon juice, and vegetable broth.
Step 2
Stir all well and cook for 25-30 minutes or until most of the liquid has evaporated. Remove from the heat. Mash the vegetables and optionally add some more salt to taste.
Step 3
Transfer to serving plates. Optionally, top with some sour cream and garnish with freshly chopped parsley and lemon wedges. It is a great side to your favorite Keto meals.
