These simple low carb popsicles are sweet with fresh strawberries and mint and a hint a of lemon.
Add the strawberries, mint leaves, lemon juice and syrup to a food processor. Pulse to combine and break down the fruit.
Add the water and blend well until combined, and only small flecks of fruit and mint remain.
Divide the mixture between 4 popsicle molds and insert the sticks.
Transfer to the freezer for 2-3 hours until frozen.
