A protein packed side dish is a great way to keep your protein intake at that 20% recommended mark for keto diets, leaving you opportunity to make your main course focused on fats and low-carb vegetables. Just like leftovers, this dish is best served cold!
Cook you bacon in a pan until both sides are crispy. Let the bacon cool before chopping into pieces. Set this aside for later.
Next, chop the chicken into small, bite sized pieces. Toss the chicken in a pan with salt, pepper, onion powder, oregano, and olive oil over high heat. Cook the chicken until the pieces are cooked through and the outside edges all have a char – about 7-8 minutes. Allow the cooked chicken to cool enough to combine in a bowl with your chopped bacon and set aside in the refrigerator to cool entirely through.
Chop THAWED frozen broccoli into small pieces. Stir together in a bowl with all the remaining ingredients. Set the bowl in your refrigerator to marinate for 1 hour along with the chicken.
To serve, stir the cold chicken and bacon together with the marinated broccoli salad.
