If you’re looking to keep some lunches on the lighter side, Hungarian Gulyas Soup will keep your tummy happy! The traditional soup (more recognized as Goulash), isn’t necessarily known as “hearty”, but it does offer you a heaping bowlful of tender beef. This is one of those soups that you can leave simmering for a long time to intensify the flavors. Otherwise, you can have a big pot of Gulyas prepared in less than an hour!

How to Make It

Step 1

To prepare the soup ingredients, dice the onions and carrots. Mince the garlic as well.

Step 2

Heat the olive oil in a large pot on medium heat. Toss in the onions, carrots, and garlic, and get them coated in the olive oil. Cook, covered, for about 5 minutes or until the ingredients are soft and the onions are slightly transparent.

Step 3

If necessary, slice the beef into bite sized pieces. Then, transfer them to the pot. Cook the meat until it’s mostly browned and cooked through – about 5 minutes.

Step 4

Stir in the paprika, salt, and pepper. Get all the ingredients thoroughly coated in the spices and let it cook for about 30 seconds.

Step 5

Pour in the beef broth. Cover the pot, bring the soup to a boil. Then, reduce the heat to a low simmer. Let the soup simmer (covered), stirring occasionally, for about 40 minutes. The liquid may reduce some. Serve hot with plenty of chopped parsley for a truly authentic flavor!
