You are probably familiar with (and love) granola, but it is not typically a low carb food. But fear not! We have designed a delicious Keto granola recipe made with unsweetened coconut flakes, almond butter, sliced almonds, and sugar-free M&Ms. The mixture is sweetened with monk fruit which is a much easier and healthier alternative for the gut. These bars are also packed with healthy fats to help you fill up on good calories throughout the day. We like to incorporate these after a high-protein meal when we want to add more fats to our macros (for those who calorie count). These would be a great treat on a bulking diet as they are nutrient-dense and high in calories.
Preheat the oven to 325F (160C). In a medium-sized mixing bowl, combine the monk fruit, almond butter, coconut oil, egg white, and a pinch of sea salt. Stir well to combine.
Add sliced almonds, unsweetened coconut flakes, and the chocolate candies to the same bowl. Mix well to combine the almond butter mixture with all other ingredients.
Pour the mixture into an 8″x8″ baking pan. Press the mixture down very hard with a spatula. You can also take a small piece of parchment paper, place it on top, and press the mixture down with your hand.
Bake for 20 mins or until the granola bars are lightly golden brown on top. The bars will be loose when they are hot from the oven. Allow them to cool completely, then transfer them to the fridge before cutting them into bars to fully solidify them.
Cut into 12 bars. Keep bars stored in the fridge until ready to eat.
