Our Keto air fryer chimichanga is made with a delicious beef filling and a tomato-based sauce. The filling is spiced with chili powder, ground cumin, coriander, and paprika. We kept this recipe family-friendly and didn’t add any “spicy” ingredients, so feel free to add ground cayenne pepper or red pepper flakes if you want to heat it up! The filling is placed into a Keto tortilla wrapped tightly, and then placed in a preheated air fryer. The chimichangas are cooked until crisp and golden brown on the outside. You will love how easy these are to make!
Place the raw ground beef in a large preheated skillet. If you are using a higher percent fat beef as we have, there is no need to add any oil to the pan. Cook the beef on medium-high heat, breaking the meat up with a spoon. Season with 1 tsp kosher salt and granulated garlic. Cook until it is no longer pink. Drain off any excess fat and discard.
Next, you will want to add the tomato sauce, chili powder, ground cumin, coriander powder, and paprika to the beef. Cook the beef until the spices and tomato sauce have glazed the meat, about 2-3 minutes.
Place one tortilla down on a plate and fill with the beef mixture. Top with two tablespoons of shredded Mexican cheese. Fold in the sides and then roll the tortilla into a tight roll. Repeat with remaining filling and tortillas. You should be able to make about 5 tortillas.
Add the avocado oil to the air fryer. Preheat avocado oil for 3 minutes at 375 F. Then place two chimichangas into the air fryer at 400 F for 15 minutes for the first side.
Flip and cook for another 10 minutes until the chimichanga is cooked and crispy on the outside. Repeat with the remaining chimichangas. Serve with a tablespoon of sour cream on each chimichanga and sliced cherry tomatoes. Top with more shredded cheese as desired.
