How to Make It
Step 1
Let the cream cheese sit at room temperature for about 30 minutes before use. Add the cream cheese and sweetener to a bowl. Using a hand mixer, beat until light and fluffy.
Step 2
Pour the heavy cream into a separate bowl. Whisk on high speed until medium to stiff peaks form.
Step 3
Add 1/3 of the whipped cream to the cheese mixture. Fold to thoroughly combine. Slowly fold in the remaining whipped cream.
Step 4
Add the raspberries and raspberry extract. Gently mix again with a rubber spatula. Refrigerate for about 30 minutes before serving.
Step 5
Transfer the cheesecake fluff to serving bowls or glasses. Optionally, garnish with some fresh raspberries and mint leaves. Serve immediately.
