How to Make It
Step 1
Preheat an oven to 300 F. Combine the gochujang, olive oil, grated garlic and grated ginger into a bowl. Whisk together.
Step 2
Place leg quarters into a 12” cast iron skillet. Pat dry with paper towels.
Step 3
Season the meat with the salt.
Step 4
Rub the leg quarters with all the gochujang mixture. Bake in the oven for 2 ½ – 3 hours. The low temperature is key for this recipe, low and slow will result in tender juicy meat.
