We love this Paleo recipe that makes for the perfect make-ahead meal made with only six ingredients. The flavor impact is huge despite minimal ingredients! Pasture-raised pork shoulder is cooked in an Instant Pot to make this meal easy, not to mention results in a perfectly tender, succulent cut of meat. The pork shoulder is cooked in a mixture of Paleo-friendly seasonings, including ginger, sliced onion, and coconut aminos. The coconut aminos have an inherent sweetness which we use to our advantage by simmering down into a sweet and sticky sauce to glaze the shredded pork. The glazed pork is served in crisp cool lettuce cups, making the perfect wraps for the best family-friendly recipe.

How to Make It

Step 1

Rinse and dry the pork shoulder with paper towels. Then season the pork on both sides with the kosher salt and black pepper. Turn the Instant Pot onto the Saute function. Wait until the pot says ‘Hot.’

Step 2

Once hot, add the avocado oil. Add in the pork shoulder. Place sliced white onion and sliced ginger around the edges of the pork shoulder. Sear the first side of the pork shoulder for several minutes until golden brown. This is best achieved if you do not attempt to lift the pork from the contact surface for several minutes.

Step 3

Flip the pork and repeat on the other side for several minutes or until nicely golden brown. Once browned, add in the coconut aminos and chicken stock.

Step 4

Place the pot on High pressure for 45 minutes. Release the pressure and remove the lid. Flip and set the pot on high pressure for another 30-35 minutes, depending on how tender the pork is after flipping it. Set the pot for the longer time if it is still tough in places.

Step 5

Transfer the meat to a cutting board and shred the meat into bite-sized pieces. Strain the broth. Using a fat separator, drain the broth back into the Instant Pot. If you do not have a fat separator, then spoon off as much of the fat as possible and discard it. Some fat left is ok because fat is flavor!

Step 6

Turn the pot onto the saute setting and allow the mixture to come to a boil. Add the shredded meat once the mixture is about ¼ of the way cooked down. Continue to cook until the sauce glazes the pork and no residual sauce is left on the bottom. Serve the pork immediately in clean lettuce leaves.
