Stuffed inside juicy chicken breasts, the creamy and crunchy filling gives that comfort-food feel without the food coma nap.
How to Make It
Step 1
Preheat an oven to 375 degrees. Prepare your chicken breasts by butterflying them and sprinkling the first amounts of salt and pepper over the insides.
Step 2
Use a fork to spread 1 oz of goat cheese inside each chicken breast. Place on the of the goat cheese chopped pecans and chopped dried cranberries.
Step 3
Use toothpicks to secure the chicken breasts shut and place them in a baking dish that has been lightly sprayed with pan spray. Over the tops of the chicken breasts sprinkle all remaining seasonings and drizzle the olive oil.
Step 4
Wrap foil over the top of the dish and bake for 20 minutes. Then, remove the foil and bake uncovered for an additional 30 minutes.
