Whether you’re waiting in anticipation for the holidays or you are ready for celebratory cooking, this pairing of goat cheese with pecans and dried cranberries will hit the spot! Stuffed inside juicy chicken breasts, the creamy and crunchy filling gives that comfort-food feel without the food coma nap.

How to Make It

Step 1

Preheat an oven to 375 degrees. Prepare your chicken breasts by butterflying them and sprinkling the first amounts of salt and pepper over the insides.

Step 2

Use a fork to spread 1 oz of goat cheese inside each chicken breast. Place on the of the goat cheese chopped pecans and chopped dried cranberries.

Step 3

Use toothpicks to secure the chicken breasts shut and place them in a baking dish that has been lightly sprayed with pan spray. Over the tops of the chicken breasts sprinkle all remaining seasonings and drizzle the olive oil.

Step 4

Wrap foil over the top of the dish and bake for 20 minutes. Then, remove the foil and bake uncovered for an additional 30 minutes.
