We have made these delicious Keto Tuna Melts by filling fresh and colorful bell peppers with a tuna salad. The tuna salad is made by combining wild-caught canned tuna, a good quality mayo, and diced white onion. Feel free to add diced celery as well. The mixture is placed into a bell pepper which has been sliced in half. Then, the bell peppers are topped with a slice of muenster cheese which is melted in the oven. We love a quick, easy weeknight meal high in protein and healthy fats! Be sure to use avocado oil-based mayonnaise or homemade mayo for this Keto tuna recipe.
How to Make It
Step 1
Preheat an oven to 350 F. Drain the canned tuna. Place the canned tuna in a medium-sized mixing bowl. Add in the mayo, kosher salt, black pepper, and finely diced white onion. Stir well to combine. Set aside.
Step 2
Cut the bell peppers in half. Remove the stem as well as the seeds and discard them. Fill the bell pepper cups with the tuna salad mixture. Place the slices of cheese on top of each one.
Step 3
Bake 350 F for about 15-20 minutes or until the cheese is nicely melted. The filling should be hot. Allow cooling slightly before serving.
Step 4
Then serve immediately. Serve this with your favorite Keto salad. Enjoy!
