How to Make It
Step 1
Preheat the oven to 395 degrees Fahrenheit.
Step 2
Peel and mince the garlic cloves. Add the lemon zest to a small mixing bowl with the olive oil, minced garlic, lemon juice and a tablespoon of thyme leaves. Stir well to combine.
Step 3
Cut the whole lemon in half and stuff the 2 halves inside the chicken alongside the bunch of fresh thyme.
Step 4
Rub the oil mixture all over the outside of the chicken and season with salt and pepper.
Step 5
Transfer to the oven to roast for 1 hour 20 – 1 hour 30 until the chicken is cooked through and the juices run clear.
