Add butter and olive oil to a large pan and heat up over medium heat. Add the bacon slices and cook until crispy. Remove the bacon from the pan and transfer it to a plate lined with paper towels.
Pound the chicken breasts until approximately ¼ inch in thickness. Season with salt, ¼ tsp of black pepper, and 1/3 tsp of garlic powder. Place the chicken breasts into a baking dish. Drizzle the bacon fat over the meat and set it aside.
Add the cream cheese, onion powder, ¼ tsp of garlic powder, chives, and the remaining black pepper to a bowl. Mix to combine. Optionally, add more salt or black pepper to taste.
Preheat the oven to 175°C (350°F). Spread the cream cheese mixture over the fillets. You can add some more herbs or spices to the cheese mixture.
Crumble the bacon. Shred the cheese. Top the chicken with shredded cheese and bacon. Bake for 20 minutes.
When done, remove from the oven. Transfer to serving plates and serve immediately. Enjoy!
