How to Make It

Step 1

Slice the halloumi cheese lengthwise. You should get 8 slices out of the block giving you 2 slices per person. Slice the cleaned tomatoes in half where the stem was. Pile the basil leaves and then cut into strips (this is called a chiffonade).

Step 2

Make the basil vinaigrette with the olive oil, vinegar, salt, pepper, and basil strips.

Step 3

Place a nonstick pan over medium-high heat. Cook the halloumi slices for 1-2 minutes per side until golden. (Note: No seasoning is needed, this is very salty cheese.)

Step 4

Mix the tomatoes with the basil vinaigrette. Top on the slices of halloumi and enjoy!
