Easy cheese-stuffed chicken rolls are a perfect Keto Valentine's Day dinner recipe you can prepare for your significant other. This recipe is effortless to prepare and tastes excellent. Sliced chicken breasts are stuffed with cheese and then wrapped with crispy prosciutto. You can mix the cheese with your favorite fresh or dried herbs or add a pinch of cayenne for a little extra flavor. You can serve these lovely rolls as they are or along with your favorite low-carb sides (fresh or grilled veggies, sauteed mushrooms, or mashed cauliflower would pair perfectly with this lovely dish).

How to Make It

Step 1

Preheat the oven to 200°C (400°F). Grease a baking dish with butter and set it aside. Rinse and pat dry the chicken breast. Place them on a large cutting board. Slice the chicken breasts until 0.6cm (1/4 inch) thick.

Step 2

Shred the mozzarella cheese. Season each piece with salt and black pepper on both sides. Place a tablespoon of goat cheese on one end of each piece of chicken. Top an entire piece of chicken breast with shredded mozzarella.

Step 3

Carefully roll up, starting at the cheese-topped end. Tightly each piece with prosciutto and place them in the prepared baking dish. Bake for 25 minutes or until cooked through.

Step 4

When done, remove them from the oven and transfer them to serving plates. Optionally, garnish with some freshly chopped parsley and serve immediately. Enjoy!
