Begin by seasoning the pork chops with salt and pepper on both sides. Heat one tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the pork chops to the skillet and sauté for about 5-7 minutes on each side, or until they are golden brown and cooked through.

When done, remove them from the pan and transfer to a large plate. If desired, place lemon slices on top of the pork chops, then wrap with aluminum foil and let them sit while you prepare the spinach. This will add a nice flavor to your chops and keep them warm.

While the pork chops are resting, prepare the garlic spinach. In the same skillet, add the remaining tablespoon of olive oil. Mince the garlic cloves and add them to the skillet, sautéing for about 1 minute until fragrant.

Roughly chop the spinach. Add the spinach to the skillet and sprinkle with sea salt. Cook, stirring frequently, until the spinach is wilted and tender, about 3-5 minutes.
