Slice the sausage. Heat one teaspoon of olive oil and one teaspoon of butter in a large pan over medium heat. Add the sliced sausages and cook for 5-6 minutes. Remove from the pan and set aside.

Peel and finely chop the onions. Add the onions to the same pan and add the remaining butter. Cook for 5-6 minutes, stirring constantly.

Shred the cabbage. Add the cabbage to the pan and give it a good stir. Cook for 5 minutes.

Drain the tomatoes. Add them to the pan. Add the cajun seasoning and stir well. Continue to cook until the cabbage is wilted. Taste and optionally add some salt or black pepper.

Finally, add the sausage. Stir well. Cover with a lid and let it sit for about 5 minutes before serving.
Step 6
Transfer to serving plates. Optionally, garnish with some fresh parsley. Serve immediately.
