How to Make It

Step 1

Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.

Step 2

Finely chop the cranberries and fresh herbs. Add them to a mixing bowl along with the ground pork, Parmesan, olive oil, salt and pepper. Use your hands to mix together well.

Step 3

Divide the mixture evenly into 12 meatballs.

Step 4

Transfer the meatballs to the lined oven tray and bake for 18 minutes or until completely cooked through.

Step 5

Whilst the meatballs are cooking, add the cranberries, syrup and water to a small pan. Bring the mixture to a boil and crush the cranberries with a fork.

Step 6

Reduce to a simmer and cook for a further 2-3 minutes until you have a thick jam.

Step 7

Skewer the meatballs with cocktail sticks.

Step 8

Serve the meatballs alongside the cranberry jam.

  • Water – 2 tablespoon
  • Parmesan Cheese – 1 tablespoon, grated
  • Walnuts – 1 tablespoon, halves
  • Cranberries, Dried (Craisins) – 1 tablespoon, whole pieces
  • Cranberries, Fresh – 1 cup, whole pieces
  • Maple Flavored Syrup by Lakanto – 1 tablespoon
  • Salt, Sea Salt – ¼ teaspoon
  • Black Pepper – ⅛ teaspoon
