Preheat the oven to 375 degrees Fahrenheit.
Cut the fennel into 1/2 inch thick slices and quarter the onion. Arrange across a sheet pan.
Mince the garlic and add to a small bowl along with the olive oil, lemon juice and fresh thyme. Stir to combine.
Drizzle the oil mixture over the vegetables and rub in with your hands.
Transfer to the oven to bake for 30 minutes turning halfway through, until tender and golden.
