Mix together ground Italian sausage and form into 4 ½ oz portions. Heat a ½ tsp of olive oil per serving in a pan over medium heat and place the patties in the hot oil. Press them down flat with the back of a spatula.
Step 2
Place a lid over the pan and cook the patties for approx. 8-10 minutes, flipping halfway through. Set the cooked patties aside to rest and keep warm during the remainder of the recipe.
Step 3
In a large mixing bowl, combine chopped greens, thin-sliced cucumber, and halved grape tomatoes. Add in all remaining ingredients to the mixing bowl and toss the salad until all the veggies are coated.
Step 4
Serve 1 sausage patty with a fair share of salad and enjoy.
