Heat the olive oil in a skillet over a low/medium heat. Thinly slice the onion and garlic and add to the skillet, sweating gently until tender.
Add the ground pork and increase the heat to medium/high. Cook through until browned all over.
Add the sesame oil and tamari and cook for 2-3 minutes more until the pork and onions are golden and crisp at the edges.
Divide the pork between the four lettuce leaves to serve.
