Heat the olive oil in a skillet over a medium heat. Add the diced pancetta. Cook the pancetta through completely until golden brown all over. Remove from the skillet with a slotted spoon and set to one side to cool.

Add the sour cream, cream cheese, and mayonnaise to a small mixing bowl. Crush the garlic. Add the garlic and lemon zest to the mixing bowl along with the salt and pepper. Mix well to combine.

Preheat the oven to 375 degrees Fahrenheit. Add the grated parmesan and cheddar to the bowl. Add the cooled pancetta. Stir well to combine, distributing the pancetta throughout the cheese mixture.
Step 4
Spoon the mixture into a 4 inch ramekin. Transfer to the oven and bake for 18- 20 minutes. The dip should be melted, oozy, bubbling and piping hot through.
