Dice the cucumber into tiny bite sized chunks. Add the diced cucumber to a mixing bowl along with the salt, mixing well to combine. Set to one side for 15 minutes to allow the cucumber to release any excess liquid.

Whilst the cucumber is resting, finely chop the mint and add to a mixing bowl along with the crème fraiche, lemon zest and cumin. Stir well to combine.
Step 3
Drain any excess liquid from the diced cucumber and blot with kitchen paper to remove any further moisture and the salt.
Step 4
Add the diced cucumber to the crème fraiche mixture and stir well to combine until completely coated. Refrigerate until ready to serve.
