Combine quartered mushrooms, diced celery, and ground chorizo in a pan over medium heat. Break the sausage up in the pan occasionally as you cook with a lid on. Cook for about 6-7 minutes – until the chorizo is crumbly and the mushrooms and celery are tender enough to have absorbed the flavors of the chorizo.

Turn the heat down to low and stir in chopped arugula. Stir until the arugula has just wilted. Serve immediately while hot.
