Slice the cauliflower into two even steaks, each about a half inch thick. Add to a pan of boiling water and simmer until the steaks are tender. Remove from the pan and pat dry.

Heat the olive oil in a skillet over a low/medium heat. Finely slice the mushrooms and crush the garlic. Add to the pan and cook gently for a minute or two until just tender.

Preheat the oven to 400 degrees Fahrenheit.

Divide the tomato sauce evenly between the two cauliflower steaks and sprinkle over the Italian seasoning. Divide the garlic mushrooms between the two steaks.
Step 5
Finely slice the olives and arrange over the mushrooms.

Transfer the cauliflower steaks to a shallow oven tray and bake for 8-10 minutes until the cauliflower starts to turn golden and is hot through.
