Heat half a tablespoon of olive oil in a skillet over a medium heat. Add the prosciutto slices and cook through until crisp and golden. Set aside to cool.

Very thinly slice the cabbage and onion and add to a large mixing bowl. Toss to combine.

Add the remaining olive oil, lemon juice and mustard to a small bowl. Season with salt and pepper and whisk together to combine.

Drizzle the dressing over the slaw and mix well to coat.

Very thinly slice the prosciutto into strips and add to the slaw before serving. Toss to combine.
