Add the cauliflower rice to a mixing bowl.
Roughly chop the walnuts, filberts, cranberries and spinach and add to the mixing bowl along with the sunflower seeds and cauliflower rice.
Finely dice the avocado and slice the scallion. Add to the mixing bowl along with the other salad ingredients.
Season with salt and pepper and drizzle over the oil. Mix together well to combine before serving.
