How to Make It

Step 1

Add the cauliflower rice to a mixing bowl.

Step 2

Roughly chop the walnuts, filberts, cranberries and spinach and add to the mixing bowl along with the sunflower seeds and cauliflower rice.

Step 3

Finely dice the avocado and slice the scallion. Add to the mixing bowl along with the other salad ingredients.

Step 4

Season with salt and pepper and drizzle over the oil. Mix together well to combine before serving.

  • Walnuts – 1 tablespoon, chopped
  • Filberts, Raw – 1 tablespoon, chopped
  • Sunflower Seeds, Raw – 1 tablespoon, whole pieces
  • Spinach – 1 cup, cut pieces
  • Scallions – 1 small – 3″ long
  • Olive Oil – 1 tablespoon
  • Avocado – 0.5 each
  • Salt, Sea Salt – ¼ teaspoon
  • Black Pepper – ⅛ teaspoon
  • Cauliflower Rice – 1 cup, cut pieces
