Add the green beans to a pan of boiling water and simmer for 3-4 minutes until just tender. Drain completely.

Whilst the beans are cooking, thinly slice the onion and olives, crush the garlic and roughly chop the capers. Heat the olive oil in a skillet over a low/ medium heat. Add the onion and sweat gently until tender.
Step 3
Add the olives, capers, garlic and lemon zest and stir well to combine. Cook for a minute or so until tender and fragrant.
Step 4
Add the beans to the pan and toss to combine. Cook for a further minute or two until the beans are hot through.
