Finely dice the onion and slice the okra into 1 cm chunks, removing the tops and tips. Heat a tablespoon of olive oil in a frying pan over a medium heat. Roughly dice the bacon and add to the pan, frying until just cooked through and the bacon begins to release its fat.
Step 2
Heat the remaining oil in the pan and add the okra and onion. Stir well to combine, sweating until tender. Finely slice the garlic and add to the pan. Stir well to combine.
Step 3
Add the cauliflower rice and seasonings to the pan. Mix everything together well and continue to cook for a further 2-3 minutes or until the okra is cooked through and the bacon is golden brown.
