Start with a washed cucumber, and cut slices no thicker than ½-inch. Each slice will weigh about 10 grams. Lay the cucumber slices flat on a sheet of paper towel, and lay a second piece of paper towel over them. Press the paper towel down to absorb excess moisture from the cucumber slices. Leave this set-up aside for now.
Step 2
In a small bowl, mash softened goat cheese with a fork. You may leave your goat cheese out on the kitchen counter to soften shortly before starting the recipe to make things easier. Do not heat the goat cheese, however. Sprinkle the everything seasoning in the bowl, and use the fork to mash the goat cheese and seasoning together into a soft spread. Remove the paper towels from the cucumber slices, and arrange the slices on a serving dish.
Step 3
One by one, use your fork to pick up and spread a thick layer of goat cheese spread on a cucumber slice. Use the fork to scrape the sides and leave a textured pattern on top of the goat cheese. When all the cucumber slices are topped with goat cheese, drizzle extra virgin olive oil over everything. The textured goat cheese will hold onto the oil so it doesn’t drip down the sides of the cucumber.
