Make your espresso first using your favorite brand of ground espresso. Ideally, two shots of espresso are preferred for a proper latte, but you can use more or less depending on how much caffeine you want. If you want to keep the right ratio of milk to espresso for your latte, make sure to adjust the other ingredients respectfully if you change the amount of espresso in the recipe.
Step 2
Next, make the pumpkin milk. Heat almond milk, heavy cream, and canned pumpkin together until the liquid just reaches a simmer. Stir the ingredients together and add in vanilla extract, pumpkin spice, cinnamon, and liquid stevia. Adjust the pumpkin milk to your taste, but remember you want very rich flavors to flavor your coffee. Take the pumpkin milk off of the heat and use a hand immersion blender to fully blend the milk together.
Step 3
To assemble the latte, pour the espresso into the bottom of a coffee cup. Pour 8-ounces of hot pumpkin milk into the cup. You should have about 4 ounces of pumpkin milk remaining, which you will need to foam with a milk frother or you can use your hand immersion blender. You can also use a bullet blender to froth your milk. Pour the warm, frothy pumpkin milk onto the top of your latte and enjoy.
