Add the butter, turkey broth, onion powder, xanthan gum, and black pepper to a saucepan. Mince the garlic and it to the saucepan. Transfer the pan to the stove and turn it on to medium-high.

Start whisking as the butter melts and all the ingredients are incorporated. Keep whisking until the gravy reaches a boil. Drop the heat to low and let it simmer for 1 minute.

Remove the gravy from the stove. Taste and adjust seasoning if needed. Pour it into a gravy boat and serve.
