Step 1
Add the coconut cream, coconut oil and coconut butter to a small saucepan over medium heat. Whisk in the arrowroot powder until dissolved and no lumps remain. Bring to a gentle simmer and keep whisking until it thickens, about 3-5 minutes.
Step 2
Transfer the coconut cream to a blender or food processor. Add in the frozen blueberries, açai berry powder, vanilla extract, coconut extract, sea salt, and squeeze in the lime juice. Blitz to a smooth puree and then fold through the desiccated coconut.
Step 3
Equally fill the popsicle molds to the top. Carefully place the handles into the molds. Transfer to the freezer and freeze for a minimum of 4-6 hours. For best results freeze overnight before removing the popsicles from mold and serving.
